Applesauce Cinnamon Muffins

These are my kids' perennial and most-requested favorite!

Ingredients: 

2 c unsweetened apple sauce
1/2 c safflower or canola oil
1/3 c agave
1 t vanilla
1 3/4 c Cooqi Pancake Mix
2 eggs
1/4 c almond meal (if nut-free, substitute Teff or Amaranth flour, or more Pancake Mix)
2 T ground flax
1/4 c rice bran
2 t cinnamon
cinnamon sugar (for topping)

Instructions: 

Preheat oven to 350. Spray or line muffin pans. Mix dry ingredients in a bowl. Combine wet ingredients in mixer on low until blended. Mix in dry ingredients on low until smooth. Scoop batter into muffin pans and sprinkle with cinnamon sugar. Bake for 20-22 minutes, until inserted toothpick comes out clean.
