Awesome Sandwich Bread


This recipe will soon be its own mix, but since that’s not ready yet, I wanted you to have a really great loaf bread recipe.


2 1⁄2 c
Cooqi Pizza+Pita Mix
2 T
ground flax
1 pk
yeast (included with mix)
3⁄4 t
xanthan gum (there is some xanthan gum in the mix already, but loaf bread requires more to keep it from crumbling)
1 1⁄2 c
1 T
1 T
canola oil
1 t
cider vinegar


Preheat oven to 350 and spray a loaf pan (4½ ” x 8”) with spray oil. In the bowl of a stand mixer mix together dry ingredients. With mixer on low, add water, honey, oil, and vinegar, and mix until incorporated. Stop mixer, scrape down sides of bowl, turn mixer to high speed and mix for 1-2 minutes, until dough becomes smooth and creamy and lightens in color. Pour dough into prepared pan and smooth with a wet spatula. Cover with a towel and let rise until the dough appears level with the top of the pan. (Try not to let it rise past this point—if it rises too high, the lack of gluten to hold it together will cause it to deflate as it cools.) Bake for 20 minutes, remove from oven and brush top of loaf with lightly beaten egg white (optional), and bake for another 15-20 minutes, until instant read thermometer inserted into center of bread reads 180 degrees. Remove bread from pan and cool on a rack. Don’t wrap, slice, or bag until bread is thoroughly cooled. If storing bread in the freezer, slice, wrap with plastic wrap and place in a freezer bag. To use, remove desired number of slices without thawing entire loaf. Revive in microwave for 20-30 seconds, or toast frozen bread in toaster.
