PB Fudgy Crinkles
Extra chocolate and peanut butter ratchet this classic up a notch. The cute little chocolate chip in the middle, plus the snowy powdered sugar finish add irresistable drama. What's to not like?

• 1 c. Cooqi Multi-Purpose Flour
• ½ c. cocoa
• 1 tsp baking powder
• ½ tsp. baking soda
• ½ tsp. salt
• ½ c. real peanut butter
• ¼ c. organic palm shortening
• ½ c. sugar
• ¼ c. pure maple syrup
• 2 eggs
• 1 tsp vanilla
• 1 c. chocolate chips
• 1 c.powdered sugar for rolling dough
Preheat oven to 350 and spray a cookie sheet with spray oil, or line with parchment.
In a medium bowl, whisk dry ingredients together and set aside. In bowl of stand mixer mix peanut butter, shortening, sugar, and maple syrup until blended but not creamed. Add eggs and vanilla and mix on low until blended. Add dry ingredients and mix on medium-low speed until all ingredients are well blended and batter is smooth. Fold in chocolate chips. Cover batter and place in refrigerator to chill for ½ hour.
Scoop chilled batter into 1-inch balls. Roll balls in hands to shape, roll shaped balls in powdered sugar, and place on cookie sheet. Press a chocolate chip into the center of each cookie. Bake at 350 for 12-14 minutes. Cool on a wire rack.
